The Pays de Fontainebleau has launched an initiative to integrate local products into public catering, beginning with seasonal "terroir" menus.

The Pays de Fontainebleau is committed to developing local sourcing within public collective catering. In 2025, a working group comprising local farmers, artisans, and collective restaurants was established to organize proximity supply chains adapted to canteens.
Workshops and visits helped identify the necessary conditions for this initiative's success. It has already inspired a first concrete action: the creation of seasonal "terroir" menus that highlight regional producers and artisans.
This "terroir" menu, offered in partnership with 13 municipalities, marks a significant step. On Wednesday, October 14th, children from the intercommunal leisure center in Cély had the opportunity to taste this menu. Tomorrow, 13 schools will offer a second menu, also made with products from local producers.
This menu was created with the support of the Depreytère Restauration group, in collaboration with local producers and suppliers.
